Some dishes are recipes; others are rituals. At Las Manos, in Peru’s Sacred Valley, the kankacho belongs firmly to the second kind: a whole lamb shoulder that spends twelve hours in a clay oven before it reaches the table. It is the most ordered dish in the house, and the best single reason to drive ten minutes past Urubamba.
What exactly is kankacho?
Kankacho is Andean slow-roast lamb: the shoulder is seasoned, sealed inside a clay oven warmed by wood fire, and left to cook low and slow until the meat gives up and slides off the bone. There is no shortcut and no way to rush it — the oven is loaded in the morning for the day’s service. Ours is served the traditional highland way, with papas reventadas (potatoes burst open in the oven) and a salad cut from the hacienda’s own garden.
Why twelve hours matter
Lamb shoulder is a hard-working muscle, rich in collagen. Give it fierce heat and it turns tough; give it half a day beside falling embers and the collagen melts into gelatin, basting the meat from within. What arrives at the table needs no knife — a spoon is closer to the right tool. The wood adds the final signature: a quiet smokiness that no gas oven can imitate.
How to order it
- Come hungry and share. The kankacho is generous; most tables order it as the centrepiece alongside starters from the garden.
- Mind the clock. Because each day’s batch is finite, the kankacho can sell out on busy weekends. Booking a table — online or by WhatsApp — is the safe play.
- Pair it with the valley. The garden salad and burst potatoes are not side thoughts; they are the dish’s balance.
Where to try it
